BLENDER PUMPKIN PIE 
1 can (29 oz.) solid pack pumpkin
2 packets Alba Fit n Frosty (vanilla)
2 packets unflavored Knox gelatin
1 tsp. salt
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/4 tsp. cloves
4 packets of Equal
1/4 c. Jello instant pudding (vanilla)

Mix Knox gelatin with 3 tablespoons cold water. Let set 1 minute to get firm. Put everything in blender except pumpkin. Put in 1 1/3 cup boiling water. Turn blender on high. Spoon in pumpkin a little at a time. Mix thoroughly. Pour into baked pie shell. Counts: 2 vegetable, 1 milk. (Weight Watchers)
