LASAGNA 
1 lb. lean ground beef
1 chopped onion
1/2 green pepper, chopped
1 clove garlic, or to taste
1 lg. can tomato sauce
1 (6 oz.) can tomato paste
1/2 tsp. oregano
1 bay leaf
8 oz. lasagna noodles
1 (10 oz.) pkg. frozen chopped spinach, cooked
1 lb. ricotta cheese
1 egg
3/4 c. grated Parmesan cheese
8 oz. grated Mozzarella cheese

Saute onion, green pepper, and garlic with the ground beef. When beef is browned, add tomato sauce, tomato paste, oregano, and bay leaf. Simmer uncovered for 20 minutes. Cook noodles. Combine spinach, ricotta cheese, egg, and 1/4 cup Parmesan cheese. Spoon 1/3 tomato sauce in bottom of 13 x 9 pan. Cover with 1/3 of noodles. Spread 1/2 of spinach/cheese filling over noodles. Sprinkle 1/2 Mozzarella and 1/4 cup Parmesan. Repeat layers, topping with a layer noodles, sauce, and grated cheese. Bake 45 minutes at 350 degrees.
