CHEDDAR QUICHE 
1 (9 inch) uncooked pie crust
4 eggs
2 c. milk
1/4 tsp. red pepper
Dash nutmeg
1 1/2 c. shredded cheddar cheese
Spinach, slightly frozen
Parmesan cheese

Place pie crust in pie pan or quiche pan. Add cheese; cut up spinach into small pieces. Arrange in pie pan. Mix eggs, milk, red pepper, nutmeg together until well blended. Pour over cheese. Put on cookie pan and bake at 350 degrees for 20 minutes, then sprinkle Parmesan cheese on top. Bake 20-25 minutes longer. Quiche is done when knife inserted comes out clean.
