CRUSTLESS CHEDDAR CARROT QUICHE 
2 c. shredded carrots
1 c. skim milk
4 eggs
2 tbsp. chopped onions
1/4 tsp. salt
1/4 tsp. ginger
1/4 tsp. pepper
4 oz. grated cheese, Cheddar

Boil carrots in 1 inch water, cover and set aside. Combine milk, eggs, onions and seasonings until well blended. Stir in drained carrots and cheese. Spray pan with Pam and pour mixture into pan. Bake at 350 degrees for 30-40 minutes. Serves 4.
