VEGETABLE CASSEROLE 
Broccoli, 1 lb. or more
String beans, 3/4 lb.
Italian squash, 1 lb.
1 pkg. frozen creamed spinach, thawed
1/2 to 1 lb. mushrooms, sauted
1/2 can French fried onions
Grated Cheddar cheese

Parboil all vegetables individually so that they are very al dente'. Season slightly with salt and dot with butter. Layer ingredients in a large casserole dish. Make one of the middle layers the creamed spinach. Sprinkle cheese over the top, more or less to your liking. Top with the French fried onion rings.

Bake covered with lid or tin foil for 45 minutes.

Note: can be prepared ahead and baked when needed. Caution: Do Not over parboil the vegetables.
