CALLOWAY GARDENS' CARROTS 
3 tbsp. butter
3 tbsp. flour
1 c. hot milk
1/4 tsp. salt
3 eggs
2 c. cooked, mashed carrots
1 tsp. vanilla
3 tbsp. sugar
1/2 tsp. nutmeg

Blend in bowl melted butter and flour. Add milk and mix until smooth. Add remaining ingredients. Pour into a greased casserole. Bake at 350 degrees for 40 minutes. Serves 6.
