LEMON PILAF 
1 c. sliced celery
1 c. chopped green onions with tops
2 tbsp. butter
3 c. cooked rice
1 tbsp. grated lemon rind
1 tsp. salt
1/4 tsp. pepper

Step 1: Saute celery and onions in butter until tender. Add rice, lemon rind, and seasonings; toss lightly.

Step 2: Continue cooking over low heat about 2 minutes or until thoroughly heated, stirring occasionally.

Step 3: Serve with broiled chicken, breast of veal, or baked or broiled fish and your choice of condiments.
