PARMESAN CHICKEN 
4 chicken breast halves, skinned and boned
1/3 c. fine bread crumbs
1/4 tsp. dried basil
1/8 tsp. pepper
1 egg, slightly beaten
Vegetable cooking spray
8 oz. can tomato sauce
1/4 tsp. garlic powder
1/4 tsp. dried basil
1/4 c. grated Parmesan cheese
1/4 c. shredded Mozzarella cheese

Place each chicken breast between 2 pieces waxed paper; flatten to 1/4 inch. Combine crumbs, basil and pepper. Dip chicken in egg; then in crumb mixture. Coat nonstick skillet with cooking spray; lightly brown both sides of chicken over medium-high heat. Remove from skillet; place in 12 x 8 x 2 inch pan.

Combine tomato sauce, garlic and basil; pour over chicken. Sprinkle with Parmesan; cover and bake at 350 degrees for 30 minutes. Uncover; sprinkle with Mozzarella and bake 5 minutes more.
