CHICKEN PARMESAN | |
6 boneless chicken breast halves 2 eggs, beaten 1 tsp. salt 1/8 tsp. pepper 3/4 c. plain, fine bread crumbs or Italian seasoned bread crumbs 1/2 c. cooking oil 2 (8 oz.) cans tomato sauce 1/4 tsp. basil leaves 1/8 tsp. garlic powder 1 tbsp. butter 1/2 c. Parmesan cheese 8 oz. Mozzarella cheese Combine eggs, salt and pepper. Dip chicken into eggs and then into bread crumbs. Heat oil in skillet until very hot. Brown chicken on both sides. Place in 13"x9" baking dish. Pour excess oil from skillet. Add tomato sauce, basil and garlic powder to skillet. Bring to a boil and simmer for 10 minutes. Stir in butter. Pour sauce over chicken. Sprinkle with Parmesan cheese. Cover and bake at 350 degrees for 30 minutes. Uncover and place Mozzarella on top and bake for 10 more minutes. |
