1/4 to 1/3 c. Parmesan cheese 3/4 c. olive oil 3/4 tsp. salt Pepper 1/4 tsp. sugar Garlic pod, cut 1/4 c. lemon juice Paprika 1/4 tsp. oregano Combine and shake well.

This dressing has the potential to be very good, but the ratio of oil to lemon juice is too high. This recipe recommends 3 parts oil to 1 part lemon juice. I used 2 parts olive oil to 1 part lemon juice and I still thought that the oil was too overpowering. Start with a 1-to-1 ratio and add more oil if needed.
