QUICK AND EASY CHICKEN 
1 lb. skinless, boneless chicken breasts, cut into 1/2" strips
1 lg. onion, chopped
1 lg. pepper, chopped
1 tsp. garlic
Olive oil
2 cans stewed tomatoes
4 oz. cheddar cheese, shredded

Saute onion, pepper and garlic in olive oil until soft. Add chicken. Saute until no longer translucent. Add tomatoes and simmer for 20 minutes. Serve over pasta or rice. Add cheese just before serving.
