SWEDISH POUND CAKE | |
1 c. butter 2 c. sugar 5 eggs 2 c. sifted flour 1 tsp. vanilla 1 sm. bag chocolate chips 1 c. flaked coconut 1 c. chopped nuts (pecans or walnuts) GLAZE: 1/2-3/4 c. sugar 1/2-3/4 c. water 1/2 stick butter 1 tsp. almond extract Cream butter and sugar. Add eggs and beat well. Stir in 2 cups flour. Add vanilla, chocolate chips, coconut and nuts. Pour into greased and floured Bundt pan. Bake at 325 degrees at least 1 hour. Cool and remove from pan. Glaze: Boil sugar and water 3 minutes and remove. Add butter and almond extract. Spread glaze on with pastry brush. |
