ZUCCHINI CASSEROLE 
6 c. grated unpeeled zucchini
1/4 c. chopped onion
1 c. grated carrots
1 can condensed cream of chicken soup
1 c. sour cream
1/2 c. melted butter
1 pkg. Stove Top stuffing mix

Boil zucchini and onion for 5 minutes and drain well. Combine with soup, sour cream, carrot mixture. Combine stuffing, seasoning and butter. Layer 1/2 stuffing in pan then zucchini mix, then rest of stuffing. Bake 30 minutes at 350 degrees uncovered. Double for 13 x 9 inch pan.
