CHEDDAR DIJON CHICKEN 
2/3 c. dry bread crumbs
1 3/4 tsp. dried basil
1 tsp. onion powder
5 skinless, boneless chicken breast halves
2 tbsp. prepared mustard
2 eggs, slightly beaten
1 (6.5 oz.) pkg. Rice-A-Roni Broccoli Au Gratin
1/4 c. vegetable oil
1/2 c. (2 oz.) shredded Cheddar cheese

Combine bread crumbs, basil and onion powder. Spread one side of each chicken breast with mustard. Coat chicken with bread crumb mixture. Dip into egg; coat again with bread crumbs. Prepare Rice-A-Roni according to package directions.

Meanwhile, in second large skillet, heat oil over medium heat. Add chicken; cook 6 minutes on each side or until golden brown. Top rice with chicken; sprinkle with cheese. Cover. Let stand 5 minutes. Cooking time: 25 minutes. Serves 5.
