SWEET POTATO SOUFFLE 
4 1/2 c. sweet potatoes, cooked and mashed (I use yams)
1 c. sugar
2 eggs
1 tsp. salt
3/4 stick butter
1/2 c. milk
3/4 tsp. cinnamon
1/2 tsp. nutmeg

Combine all ingredients and beat together. Pour in 9 x 13 pan. Bake 400 degrees for 20 -25 minutes.

TOPPING:

3/4 c. finely crushed Corn Flakes
1/2 c. chopped walnuts
1/2 c. brown sugar
1/2 stick melted butter

Mix together and sprinkle over cooked potatoes. Return to oven for 10 minutes.
