DUCK SOUP 
1 lg. or 2 sm. ducks cut into small pieces
8 c. water
2 stalks of celery with leaves, chopped
1 lg. carrot, shredded
1 lg. onion, diced
1 tsp. salt
6 chicken bouillon cubes

Place in large kettle. Simmer gently 2 or 3 hours or in a crockpot for 8 hours. If too thick, add one more cup of water. Add 2 or 3 oz. thin noodles.

Cook very slowly 30 minutes longer. This soup gets better each time it is reheated.
