STUFFED POT ROASTED WILD DUCK 
4 teal
Salt, red pepper and garlic powder to taste
3 lg. onions
2 lg. Irish potatoes, peeled and cubed
6 slices of bacon, cut in pieces
Lemon juice
Oil
1 bunch of green onion tops, chopped

Season ducks well inside and out with salt, red pepper and garlic powder. Cube two of the onions and mix together with cubed potatoes, bacon and seasoning; stuff the ducks with the mixture and skewer ducks closed with toothpicks.

Sprinkle ducks with lemon juice and let set overnight. Brown ducks in a small amount of oil; add enough water to cover and the remaining onion, chopped.

Cook over medium heat until tender, an hour to an hour and a half. Serve over rice. Serves four.
