SALMON IN FILO PACKETS 
3/4 c. green onion, chopped
3/4 c. mayonnaise
3 tbsp. lemon juice
3 cloves garlic, minced
3/4 tsp. tarragon
2/3 c. butter, melted
12 sheets filo dough
6 salmon fillets
Salt and pepper to taste
6 tbsp. grated Parmesan cheese

Preheat oven to 375 degrees.

Mix together green onion, mayonnaise, lemon juice, 2 of the garlic cloves and tarragon. Set aside. Combine remaining garlic with butter.

For each packet, brush one sheet of the filo dough with garlic butter. Arrange another sheet on top and brush again with garlic butter. Lightly sprinkle salmon fillets with salt and pepper. Spread 1 tablespoon mayonnaise mixture in middle of the narrow end of the filo dough. Place salmon on top of mixture and spread another tablespoon of mixture on top of salmon. Roll up dough with salmon inside and fold ends under the salmon. Place the six packets slightly apart on ungreased baking pan. Brush with remaining garlic butter. Sprinkle with 1 tablespoon of Parmesan per packet. Bake for 20-25 minutes. Serves 6.
