LEMON CREAM RICE 
1/2 c. rice
1/2 c. sugar
3/4 tsp. salt
2 tbsp. powdered sugar
2 eggs, separated
3 c. milk
Grated rind of 1 lemon
1/4 tsp. lemon extract

Clean rice and place in a double boiler. Add milk and cook until rice is soft. Add to the mixture: sugar, lemon rind, lemon juice, salt, beaten egg yolks. Cook the two mixtures together for thickening. Turn into buttered oven dish. Beat egg whites until stiff and fold in powdered sugar. Spread on top of rice dish. Brown in oven.
