GREEK SLAW 
1 head cauliflower, cut in bite size
2 bunches green onions, chopped
1 green pepper, chopped
1 (6-8 oz.) can baby shrimp
1 c. cooked rice (Minute Rice)
1 jar green olives, sliced
1 c. mayonnaise plus 2 tbsp. lemon juice
Salt and pepper

Mix thoroughly. Serve as a main dish with hard rolls and a fresh fruit salad. Makes a great luncheon dish.
