MEXICAN HOT CHOCOLATE - MICROWAVE | |
1 1/2 sqs. (1 1/2 oz.) semi-sweet chocolate 1/4 c. water 2 tbsp. sugar 1/4 tsp. ground cinnamon 1/8 tsp. ground nutmeg 1 qt. milk 4 lg. marshmallows 1/4 tsp. almond extract In a 2 quart microwaveable pitcher or bowl, combine chocolate, water, sugar, cinnamon, and nutmeg. Cook on High, uncovered, 4 minutes or until mixture has boiled 2 minutes, stirring occasionally or as needed. Stir in milk and cook on High, uncovered, for 6 minutes or until hot. Add marshmallows and almond extract. Beat with whisk or beater until foamy. Cook, uncovered 2 to 3 minutes or until hot. Serves 4 - 1 cup servings. |
