FRESH DICED CLAMS 'N' NOODLES | |
24 clams 1/4 lb. butter 1 onion, chopped 1/2 c. chopped mushrooms 1 clove garlic, mashed 2 tbsp. parsley 1/2 tsp. oregano Salt and pepper Noodles Clean, shuck, and dice clams. If using canned or shelled clams, reserve all liquid. Heat butter in skillet. Add onions, mushrooms, and garlic and saute for several minutes. Add clams and cook for approximately 10 minutes. Stir occasionally with spatula. Stir in parsley, oregano, and season with salt and pepper. Cook noodles according to package directions. Serve clam mixture over noodles. Serves 4. |
