FUNNEL CAKES 
2 c. unsifted flour
1 tbsp. sugar
1 tsp. baking powder
1/4 tsp. salt
2 eggs
1 1/2 c. milk
Vegetable oil for frying

Combine dry ingredients. Mix eggs and milk together and pour into dry ingredients. Stir until batter is smooth.

Heat oil in skillet about 1 1/2 to 2 inches. Hold a funnel with 1/2 inch opening and keep one finger over the spout. Pour about 1/2 cup batter in funnel. Hold funnel over oil and using a slow swirling motion dribble batter in shape of a coil. Start in center of pan. Fry 2-3 minutes on each side, turning once. Drain on paper towels. Sprinkle with powdered sugar or top with fruit. Makes about 6 cakes.
