RICE PILAF 
1 pepper, chopped
1 onion, chopped
1/2 c. butter
2 (2 1/2 oz.) cans mushrooms with juice
1 (10 1/2 oz.) cans chicken consomme or chicken with rice soup
1 c. uncooked rice

Saute peppers and onions in butter. Add mushrooms, consomme and rice. Pour mixture into 2 quart casserole and bake for 1 hour at 350 degrees.
