BANANA CHOCOLATE CHIP MUFFINS | |
DRY INGREDIENTS: 2 c. whole wheat pastry flour 3/4 c. coarse, unprocessed bran 1/2 c. wheat germ 1 1/2 tsp. baking soda 1 tsp. baking powder WET INGREDIENTS: 1 c. plain yogurt 1 1/2 c. bananas, mashed 1/2 c. honey 2 tbsp. vegetable oil 1 egg, slightly beaten 1/2 c. mini-chocolate chips Tim's Instructions: "Mix dry stuff, mix wet stuff, throw together and bake....ya!" (Don't use paper cups in muffin pans.) Tim follows the above recipe but alters it slightly by adding an extra cup of whole wheat flour, omitting the bran and wheat germ, adding 1/4 cup sugar with the honey, throwing in more chocolate chips--up to a cup, and by using 3 or more large bananas. (Remember, the more bananas used, the moister the muffin.) Bake for about 20 minutes in 400 degree oven. Do not overbake. Yield: About 1 1/2 dozen. |
