CORN CAKES 
1 1/2 c. flour
3 1/2 tsp. baking powder
3/4 tsp. salt
1 egg
1 c. milk
3 tbsp. melted shortening or salad oil

Sift together dry ingredients; beat egg. Add milk, combine egg and milk mixture with dry ingredients, mixing until smooth.

Add corn and shortening or oil, drop by spoonfuls on hot griddle, spreading thin.

Cook until brown on both sides. Serve hot, plain or with butter, syrup, or jelly. Makes 6 servings. To serve 2 people, cut recipe in half.
