CORN CAKES 
2 c. fresh or whole kernel corn, drained
1 egg
1/2 c. flour
1 tsp. salt
1/2 tsp. baking powder
2 tbsp. sugar
Dash of pepper

Mix all ingredients well. If batter is too thick add small amount of milk. Drop by tablespoons into hot fat that is 1/4" deep in pan. Cook until golden brown, turning once or twice. Drain on paper towels. Serve hot (top with maple syrup if desired). Serves 4.
