EASY TILAPIA WITH WHITE WINE
BUTTER SAUCE
 
1 to 1 1/2 lb. tilapia fillets (or your favorite fish)
2 tsp. seasoning salt (Lawry's)
4 tbsp. all-purpose flour, divided
1/4 cup white wine
4 tbsp. (1/2 stick) butter, divided

Note: First check fillets for any small bones and remove. Usually when purchased fresh from the grocer there will not be any, but better to be safe!

Begin to heat large pan on medium-high heat. Combine seasoning salt and 3 tablespoons flour either in a bowl or Ziploc bag and coat pan with one tablespoon butter. Add fillets to flour and season salt mixture, just lightly coating them. Place coated fillets in pan. Cook fish for about 3 to 4 minutes on first side. Turn fillets and add another tablespoon of butter to pan. Cook until fish is slightly golden and flakes easily. Transfer to serving plates.

Add remaining butter to pan, white wine and remaining flour, mix. just until warmed and sauce-like. Pour this over Tilapia. Can be served well over light pasta or with salad or asparagus.
