STRAWBERRY COCONUT CAKE 
1 pkg. white cake mix
1 (3 oz.) box strawberry flavored gelatin
1 c. chopped pecans
1 c. or more coconut
1 c. frozen strawberries (thawed)
4 eggs
2/3 c. cooking oil

Beat all ingredients with mixer at medium speed for 2 minutes or 250-300 strokes by hand. Bake in greased and floured pan approximately 7x10 or a little larger in oven heated to 350 degrees approximately 30 minutes or until done when tested. Use white frosting with coconut mixed in it. Also good without frosting.
