VIDALIA ONION CASSEROLE 
1 c. finely crushed saltines
1/2 stick butter for crust
1/4 stick butter for filling
3 c. thinly sliced onions
3/4 c. milk
2 lightly beaten eggs
1 tsp. salt
1 c. shredded sharp cheese

Melt 1/2 stick butter and add saltines. Press into 9 inch pan. Melt 1/4 stick butter in skillet; add onion and cook until tender, do not brown. Put into pie shell.

Heat milk. Beat eggs and add to mixture. Add touch black pepper and nutmeg. Do not boil this mixture. Pour over onions and sprinkle with cheese. Bake at 350 degrees for 30 minutes.
