OLD FASHIONED BAKED MEAT LOAF | |
1 carrot, cut into 4 pieces 1 onion, cut into 4 pieces 1 stalk celery, cut into 4 pieces 1/4 c. fresh Italian parsley 1 lg. clove garlic 2 slices Pritikin whole wheat or rye bread, quartered 2 egg whites 1/2 c. nonfat milk 1 lb. ground flank steak or very lean ground beef Freshly ground pepper Place carrot, onion, celery, and parsley in food processor or blender. Process until chopped. While processor is in motion add garlic to vegetable mixture. Continue to process until finely chopped. Scrape down sides. Add bread and process until crumbled. Add egg white and milk, process. Place ground meat in mixing bowl and add vegetable mixture. Sprinkle with ground pepper. Blend with fork until mixture is well blended. (Do not over mix - it will make the meat loaf tough). Shape into a 8 inch square baking dish. Bake at 350 degrees for 50-60 minutes. Serves 6 (2 slices = 1 serving). 150 calories. |
