ZUCCHINI CASSEROLE 
6 c. sliced zucchini
1 c. sliced carrots
1/2 c. diced onions
1 can cream of chicken soup
1 c. sour cream
1 box Stove Top dressing (chicken flavor) plus 1/2 c. butter, melted

Cook veggies 5 minutes in salted water. Drain well. Mix together soup and sour cream, add to drained veggies. Toss dressing and melted butter together. In large casserole, layer 1/2 stuffing, veggies, rest of stuffing. Bake at 350 degrees for 25 minutes.
