ORANGE SWEET POTATOES 
8 fresh oranges
8 med. sweet potatoes
3 tbsp. butter
1/2 c. brown sugar
2 tbsp. maple syrup
2 tbsp. sherry

TOPPING:

Miniature marshmallows
Cooked crumbled bacon and/or chopped pecans (both optional)

Cut the top half from each orange and scoop out the pulp, reserving 2 tablespoons of the juice. Cut up the potatoes, boil until fork tender, cook, peel and mash.

To the mashed potatoes, add the butter, brown sugar, orange juice, maple syrup and sherry. Mix well. Fill the orange shells with the mixture and top with marshmallows, and the bacon and/or pecans, if desired.

Place on baking sheet in 350 degree oven and heat thoroughly.
