SQUASH CASSEROLE 
2 lb. squash, cooked, drained & mashed
1 can cream of chicken soup
2 tbsp. pimento
1 stick butter
1 med. carrot, grated
1 sm. onion, chopped
1/2 pt. sour cream
1 pkg. corn bread stuffing mix

Toss together stuffing mix and melted butter. Combine all other ingredients. Add half or more of stuffing mixture. Put into large casserole, sprinkle rest of stuffing mix over top and bake at 375 degrees for 25-30 minutes.
