SQUASH CASSEROLE 
1 1/2 lbs. fresh squash, cut in sm. sections
1 1/2 c. corn, cut and scraped from cob, or 1 can whole kernel corn
2 tbsp. chopped onion
1/2 c. green chili, fresh or canned, chopped
1 tomato fresh or canned, chopped
1/2 lb. grated American or Longhorn cheese
Salt to taste

(Use any kind except Acorn squash, green is prettiest).

Boil squash, onion and corn (if fresh corn is used) in very little water until tender. Pour off excess liquid and mash squash. Mix together all ingredients and place in ovenware dish. Bake 30 minutes at 350 degrees.
