HAPPY DAY CAKE 
2 1/2 c. flour
3 tsp. baking powder
1 tsp. salt
1 1/2 c. sugar
1/2 c. shortening
1 c. milk
2 eggs, beaten
1 tsp. vanilla flavoring

Measure dry ingredients together. Beat shortening to soften, mix sugar, next beat one egg at a time until fluffy. Mix milk and other dry ingredients a little at a time until the texture is nice and smooth. Beat on medium speed for about 2 minutes after all ingredients are mixed.

Bake in a 375°F oven about 20 to 25 minutes.
