HAPPY CAKE 
5 eggs
1 3/4 c. sugar
1 tsp. vanilla
1 (8 oz.) jar cherries (maraschino with juice), cut in quarters
2 c. flour
2 sticks butter
1 c. pecans, finely chopped
1 can Angel Flake coconut

Cream butter and sugar very well and add vanilla and eggs. Add flour, nuts, cherries and coconut. Bake at 250 degrees for 1 1/2 hours using a tube or loaf pan.
