COCONUT MACAROONS 
2 egg whites
1/4 tsp. salt
1 1/2 c. coconut
1/2 tsp. vanilla
2/3 c. powdered sugar

Beat egg whites with salt until stiff, but not dry. Add sugar, 1 tablespoon at a time, beating until smooth. Add vanilla and coconut and mix lightly. Bake at 325 degrees for 15 minutes.
