POTATOES WITH DUMPLINGS 
4-6 med. potatoes, cubed into bite size pieces
2 c. flour
2 eggs
1 tsp. salt
Water
1/4 - 1/2 c. butter
Half and half
1/4 c. chopped onion, sauteed (opt.)

Boil potatoes in salted water until done. Mix flour, eggs, salt and enough water in a bowl until you have a slightly sticky thick dough. Use a teaspoon dipped in potato water to drop dumpling dough into the boiling potatoes (1 teaspoon at a time). Continue to cook for approximately 5 minutes or until dumplings are done. Drain. Cover with 1 cup half and half, butter and sauteed onions if desired.
