CORNBREAD 
1/4 c. vegetable oil
2 c. cornmeal
2 tsp. baking powder
1/2 tsp. baking soda
1 egg, slightly beaten
2 c. buttermilk

Preheat oven to 400 degrees. Place oil in 10 inch black iron fry pan; heat in oven 10 minutes. Combine cornmeal, baking powder, and baking soda in medium size mixing bowl. Beat together egg and buttermilk carefully. Stir into dry ingredients; do not overmix. Stir in hot oil. Pour batter into hot fry pan. Bake 30 to 40 minutes or until golden brown. Remove from fry pan to serving plate. To serve, cut into pie shaped wedges. Makes 8 to 10 servings.

Variation: Cracklin Cornbread: Add 1 cup cracklins to the dry ingredients.
