DUTCH STYLE POTATO FILLING 
8 lg. potatoes
3 c. stale white bread, torn into pieces
2 eggs
1 c. chopped onions
1 c. chopped celery
2 tbsp. butter
Salt & pepper to taste

Prepare mashed potatoes; use a little more milk than you normally would for regular mashed potatoes. Set aside. Saute onions and celery in butter until onions are transparent.

In a separate bowl, combine onion and celery mixture with bread pieces. Add eggs and mix gently. Fold this mixture into the mashed potatoes. Turn into a greased casserole dish. Bake at 350 degrees for 1 hour or until top of filling is browned. Serves 8 people.

Perfect as an alternative to mashed potatoes or served as an accompaniment to Thanksgiving turkey.
