BAKED CHICKEN CUTLET ROLLS
1/4 lb. melted butter
Chicken cutlets (number of cutlets determines number of rolls)
Thin smoked ham slices (one per each cutlet)
Sliced Mozzarella cheese (one slice per cutlet)
Fresh tomato wedges (one per cutlet), tossed with sage

For approximately 4 cutlets, mix: 1 cup bread crumbs, 2 tablespoons parsley, 1/2 cup grated Parmesan cheese. Pound each cutlet thin. Lay a slice of ham, a slice of Mozzarella and then a tomato wedge on each cutlet. Roll and secure with a toothpick.

Dip in melted butter and then in bread crumb mixture. Place in baking dish. Pour any leftover melted butter over cutlet rolls in baking dish. Bake uncovered at 350 degrees for 40 to 45 minutes.

Yummo!!!! I didn't know how to add tomato wedges..But I cut very very thin slices of tomato... Also I would recommend prosciutto and provolone cheese instead of mozzarella... Loved this recipe an so did my picky 5 yr old eater...
