MOCHA MOUSSE 
1 tsp. instant coffee granules
1 tsp. vanilla
1 1/2 c. heavy cream
3/4 c. powdered sugar
1/3 c. cocoa

Place coffee granules and vanilla in bowl. Stir to dissolve completely. Add heavy cream, powdered sugar, and cocoa. Stir together.

Whip until stiff peaks form. Serve over piece of angel food cake. Yield: 2 1/2 cups.
