SWEET POTATO CASSEROLE 
4 c. sweet potatoes, mashed
2 c. light brown sugar
1 lg. can evaporated milk
1 stick butter
3 eggs

Mix and bake for 15 minutes at 400 degrees in a 9 x 13 inch baking dish.

TOPPING:

1 stick butter, melted
3/4 c. coconut
3/4 c. light brown sugar
1 1/4 c. crushed corn flakes

Melt butter and pour over above ingredients. Spread on top of potato mixture. Bake for another 15 minutes or until brown.
