HOMEMADE BREAD
6 c. plain or self-rising flour (if plain, use 2 1/2 tsp. salt)
2 tbsp. butter
1/2 c. molasses or honey or other sweetener
1 c. oats (I use quick cooking)
2 c. boiling water
2 pkg. yeast
1/3 c. lukewarm water

Put oatmeal in bowl. Add boiling water; let set until just warm. Put yeast in bowl with warm water. When oatmeal is warm, add honey and butter. I use one egg.

Mix with 2 cups of flour at a time. With the last 2 cups of flour, knead and put into a buttered bowl and let rise until double in bulk. Punch down with a knife and divide dough into 2 separate batches.

Butter or grease 2 loaf pans and let rise again until double. I put butter on top of mine and sometimes caraway seeds. Bake at 325 degrees for about 50 minutes to 1 hour.

You may like to freeze one loaf before baking. I let mine rise one time and then put in freezer. Take out and let rise the second time before baking.
