HOMEMADE BREAD 
1 3/4 c. scalded milk
2 tbsp. sugar
1 tsp. salt
1/2 c. soft shortening
2 tbsp. active dry yeast
1 1/2 c. warm water, 110 degrees
1/3 c. wheat germ
5-6 c. sifted flour

Mix sugar, salt, shortening and cool to lukewarm. Dissolve yeast in warm water. Combine with milk, wheat germ and 2 1/2 cups sifted flour. Beat until smooth. Mix in enough remaining flour to make a dough that leaves sides of bowl.

Knead until smooth and elastic, about 10 minutes. Place in greased bowl. Turn to grease top. Cover and put in warm place to rise until double, about 1 hour. Punch down and let rise. Again, turn onto board. Divide in half. Cover and let rise 10 minutes. Shape into 2 loves. Put in greased loaf pans. Cover and let rise until almost double, about 1 hour. Bake in hot oven 425 degrees for 25-30 minutes until done and sounds hollow when tapped.
