WESTERN MEAL-IN-ONE | |
1 lb. ground beef 1 tbsp. vegetable oil 1 clove garlic 1/2 c. chopped onion 1/2 c. chopped green pepper 1 tsp. chili powder 1 tsp. sugar 1 can red beans, drained 3/4 c. Minute Rice (raw) 2 1/2 c. tomatoes with juice, chopped Salt & pepper to taste 3/4 c. grated cheddar cheese 1/4 c. sliced black olives (opt.) Brown beef in oil with garlic, add onion and green pepper, cook until onion is transparent. Drain fat. In a 2 quart casserole combine all ingredients (except cheese and olives). Cover and bake at 350 degrees for 30 minutes. Uncover and sprinkle with cheese and olives. Bake 15 minutes more. Serves 6 to 8. |
