TOMATO - CORN SCALLOP 
4 slices bacon
1 med. onion, chopped
2 eggs
1 can cream style corn (16 oz.)
1 can tomatoes (16 oz.)
3/4 c. coarse cracker crumbs
1/4 c. chopped parsley
1 tsp. salt

Mix all ingredients, except bacon. Arrange bacon slices on top and bake at 350 degrees about 40 minutes.
