APPLE MUFFINS 
1 c. raw honey
1 c. unrefined oil
4 eggs
2 1/2 c. whole wheat flour
2 tsp. baking powder
1/2 tsp. sea salt
1 tsp. allspice
1 tsp. nutmeg
1 tsp. cinnamon
1 3/4 c. chopped apples, including peel (2 apples)
1 tsp. vanilla
1 c. chopped nuts and/or raisins

Beat honey, oil, and eggs. Mix all dry ingredients. Add to honey mixture. Stir well. Add and fold together the apple, vanilla and raisins or nuts. Bake at 400 degrees for 12-15 minutes. Remove from tins to cool. Yields 24 moist large muffins.
