CHINESE BEEF TOMATO 
1 lb. round steak
2 tbsp. salad oil
1 clove garlic crushed
3 med. onions, cut in wedges
1 green pepper, cut in strips
1 c. water
3 fresh tomatoes, cut in wedges
2 tbsp. cornstarch
1 tbsp. sugar
1 tsp. salt
3 tbsp. soy sauce

Cut steak diagonally across grain into bite size strips. Heat oil in skillet. Brown the crushed garlic clove in the hot oil, then remove from skillet. Reduce heat and brown meat in oil. Cut and add onion in wedges. While meat and onions continue browning, cut and add green pepper strips. Cut and add tomato wedges. Blend together in a small bowl the cornstarch, sugar, salt, soy sauce and water. Push meat and vegetables to sides of skillet and add sauce, stirring constantly. When gravy reaches desired consistency, remove and serve over fluffy rice. Serves 4 to 5 generously.
